E-Z Baked Sliced Sweet Potatoes Or Yams

E-Z Baked Sliced Sweet Potatoes Or Yams
4 to 6 servings

  • 4 small or 3 medium or 2 large sweet potatoes or yams, peeled and thickly sliced
  • 1 to 2 tablespoons butter or margarine, melted and divided (see note)
  • About 1/3 cup orange juice
  • Nutmeg as desired
  • Salt as desired (optional)

Prepare sweet potatoes or yams for baking. Arrange sweet potato or yam slices in one layer in a shallow baking dish or pan. Drizzle butter evenly over potatoes. Pour orange juice into dish. Sprinkle potato slices lightly with nutmeg. Bake, uncovered, in a preheated moderate oven (350 to 375 degrees F.) for 40 to 45 minutes or until potato slices are fork tender, basting frequently with juice in dish. Sprinkle potatoes with salt, if desired, just before serving. Spoon remaining liquid in dish or pan over potatoes and garnish as desired.

Note: May reduce butter or margarine, if desired; liberally coat potato slices with butter-flavored non-caloric vegetable cooking spray.

Note: May bake sweet potatoes/yams at same time and temperature as ham slice, if desired.

Variations:

  • Add 1 tablespoon freshly grated orange peel to juice.
  • Use about 1/3 cup unsweetened pineapple juice, in place of orange juice; or, use 2 to 3 tablespoons each orange juice and unsweetened pineapple juice. Or, may use 2 to 3 tablespoons brandy or orange liqueur and 2 to 3 tablespoons orange juice, if desired.
