Arugula Salad with Apple, Feta Cheese, and Walnuts with Warm Olive Oil and Balsamic Vinegar or Lemon Juice

ARUGULA SALAD WITH APPLE, FETA CHEESE, AND WALNUTS WITH WARM OLIVE OIL AND BALSAMIC VINEGAR OR LEMON JUICE
4 to 6 servings

  • 4 to 6 cups crisp arugula or mixed greens of choice
  • 4 to 5 green onions, thickly sliced on-the diagonal (include some green tops)
  • 1 to 2 medium apples, cored, seeds removed, and cut into thin wedges or bite-size pieces
  • 1 cup green or red or black seedless grapes (may cut grapes in half, if desired) (optional)
  • About 1 cup cubed feta cheese or reduced-fat feta cheese
  • 3 to 4 tablespoons extra virgin olive oil
  • 2 to 3 tablespoons balsamic vinegar or freshly squeezed lemon juice
  • Salt and freshly ground black pepper to taste
  • English walnut halves or toasted English walnut halves as desired for garnish

Rinse and thoroughly dry arugula or mixed greens; make sure the greens are crisp or they will become too limp when the warm olive oil is added.

In a medium to large salad bowl, combine arugula or mixed greens, green onions, apple wedges, grapes, if used, and feta cheese; set aside.

In a small heavy saucepan, warm olive oil over low heat (oil should be warm not hot).  Drizzle warm olive oil and balsamic vinegar or lemon juice over salad mixture, tossing lightly to mix and coat greens. The greens should be slightly wilted but not totally limp or mushy. Season with salt and pepper to taste.  Garnish with English walnut halves or toasted English walnut halves. Serve immediately.  

Variations: Garnish the salad with some crisp croutons, if desired. Add thin slices of peeled avocado to salad mixture. Add thin slices or pieces of peeled mango to salad mixture. Use orange pieces or segments in place of apples.
