QUICK SAVORY BLACK OR PINTO BEANS
4 to 6 servings

 

  • 2 (15-ounce) cans black beans or pinto beans, include liquid
  • 1 to 2 firm ripe medium tomatoes, coarsely chopped, seeds removed
  • 1 medium sweet onion (Vidalia or Texas Sweet or Walla Walla or other sweet variety),   peeled and coarsely chopped
  • 1 dried whole small hot-spiced red chile pepper, crushed, or 1 or 2 fresh jalapeno pepper(s), finely chopped
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons finely snipped fresh cilantro leaves (no stems)
  • Coarsely chopped green onion (include some green tops) and sprigs of fresh cilantro as desired for garnish

 

In a medium heavy saucepan, combine the first 6 ingredients, mixing gently but well.  Bring mixture to a simmer over moderate heat; continue to simmer, uncovered, for 6 to 8 minutes or until beans are completely heated through and bubbly hot.  Remove from heat and stir in snipped cilantro.  Turn beans into a serving bowl or individual bowls and garnish with a sprinkle of chopped green onion and sprigs of fresh cilantro.  Serve hot or at room temperature.
