HALLOWEEN SPIDER SANDWICHES
6 sandwiches

 

  • 12 slices white or whole-wheat bread
  • 3/4 cup creamy or chunk-style peanut butter or reduced-fat peanut butter of choice
  • Honey as desired
  • 12 seedless dark raisins
  • 48 crisp crunchy cheese curls

 

Using a 2½-inch diameter biscuit cutter, cut a circle from each bread slice (use discarded parts of bread slices for bread crumbs).  Spread about 2 tablespoons desired peanut butter and then honey as desired on each of 6 bread circles. Top each with a second bread circle.  Make two small indentations in the top of each sandwich for "eyes".  Press a raisin into each, using a small amount of peanut butter to secure raisins.  Store sandwiches in a plastic bag, tightly sealed, in the refrigerator until ready to serve.  Just before serving, insert 8 cheese curls into the top of each sandwich, 4 on each side of "eyes" to form "spider legs".  (Sandwiches may be sent to school for lunch in sealed plastic bags and cheese curls will remain fairly crunchy.)  

Variations: Omit peanut butter; combine 3/4 cup softened cream cheese or reduced-fat or no-fat     cream (about half of an 8-ounce package) with about 2 tablespoons orange marmalade or grape jam or reduced-sugar or no-sugar marmalade or jam, mixing until mixture is smooth.  Proceed as previously directed with peanut butter.

                 Omit peanut butter and honey; use a cheese spread or reduced-fat cheese spread of      choice.  May add crumbled crisp bacon or Bacon Bits or thin apple or pear slices to cheese mixture.
