BAKED MINIATURE FILO/PHYLLO CUPS WITH SAVORY AND/OR SPICY PIQUANT CHEESE FILLINGS
about 4 to 5 dozen miniature hor d'oeuvres, about 20 appetizer servings
Savory Cream Cheese Filling:
3 to 4 (1.9-ounce) packages frozen baked miniature filo/phyllo pastry cups, thawed
Prepare filling of choice or ½ recipe of each filling.
To prepare Savory Cream Cheese Filling, combine cream cheese, garlic, half-and-half, Worcestershire sauce, hot sauce, and dry mustard in a medium bowl. With an electric mixer, beat mixture at medium speed until creamy, smooth, and blended well. Stir in green onion, if used, and pimento.
Note: May use milk or reduced-fat or skim milk, if desired; however, the flavor will not be as rich.
Variation: Add ½ cup crumbled crisp-cooked bacon to cheese mixture.
To prepare Spicy Piquant Multi-Cheese Filling, combine all cheeses and mayonnaise in a medium bowl. With an electric mixer, beat mixture at medium speed until well blended. Add garlic, Worcestershire sauce, hot pepper sauce, dry mustard, and salt and pepper, mixing well. Stir in pimento.
Variations: Add 1 to 2, or to taste, finely chopped fresh jalapeno pepper(s) to cheese mixture.
Add ½ cup crumbled crisp-cooked bacon to cheese mixture.
Add 1/3 to ½ cup minced peeled onion or green onion (include some green tops) to cheese mixture.
Note: Cheese mixtures may be stored in the refrigerator in a sealed container for several days.
Cheese mixtures may also be served as a spread with crisp crackers.
To bake and serve hors d'oeuvres, arrange filo/phyllo cups in an ungreased 15 x 10 x 1-inch baking pan or on other ungreased baking sheets. Fill each pastry cup with a heaping tablespoon of cheese mixture of choice. Bake in a preheated moderate oven (350 degrees F.) for about 8 minutes or until cheese filling is melted and bubbly hot. Transfer to a serving tray, garnish as desired, and serve immediately. May also keep hors d' oeuvres hot in the brazier of a chafing dish over very low heat for buffet service, if desired.
