YUMMY FRESH STRAWBERRY OR RED RASPBERRY SMOOTHIE

Forgot Valentine's Day?  In a hurry?  Make your sweetie feel special with a Fresh Strawberry or Raspberry Smoothie.

  • ½ to ¾ cup vanilla ice cream or reduced-fat or reduced-sugar vanilla ice cream, softened
  •   or unflavored or vanilla-flavored yogurt or reduced-fat or no-fat yogurt, chilled
  • 1 cup sliced fresh strawberries or whole fresh raspberries 
  • Sugar or granulated sugar substitute as desired (optional)
  • Several drops vanilla extract
  • Additional whole fresh strawberries or red raspberries and a sprig of fresh mint for
  •   garnish (optional)

In a blender container, combine ice cream or yogurt, 1 cup sliced strawberries or whole raspberries, sugar or granulated sugar substitute, if desired, and vanilla.  Cover and blend at high speed until mixture is smooth.  Pour "smoothie" into a tall glass.  Garnish with additional fresh whole strawberries or raspberries and a sprig of fresh mint. Preferably serve immediately.  Or, if preparing in advance, may cover and refrigerate until ready to serve.  Add garnish just before serving.

 

Variations: Use ¼ to 1/3 cup ice cream or yogurt and ¼ cup orange juice.  Add 1 teaspoon grated orange peel to mixture. Omit ice cream or yogurt; use milk or reduced-fat milk. Garnish "smoothie" with a sprinkle of granola or other crunchy cereal or coconut or finely chopped pecans or English walnuts.  Serve with an iced tea spoon. Use milk in place of ice cream or yogurt in "smoothie" preparation and add a scoop of vanilla or strawberry ice cream or sorbet or raspberry sorbet to "smoothie" just before serving.  Serve with an iced tea spoon.
