MARIAN’S QUICK ‘N’ EASY MARVELOUS ORANGE MUFFINS

MARIAN'S QUICK ‘N' EASY MARVELOUS ORANGE MUFFINS

12 to 15 muffins

 

These muffins are great to give as an edible gift for the upcoming holidays.

 

  • 1½ cups flour
  • ¾ cup sugar or the equivalent of ¾ cup sugar in granulated sugar substitute
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2/3 cup chopped pitted dates or English walnuts or pecans, or a 1/3 cup of each dates and nuts of choice
  • 1 unpeeled large seedless orange, cut into several pieces (see note)
  • ½ cup orange juice
  • 1 egg or the equivalent of 1 egg in egg substitute, IE, Egg Beaters, at room temperature
  • ½ cup butter or margarine, at room temperature

 

In a medium bowl, sift together the flour, sugar, baking soda, baking powder, and salt; stir in dates and nuts, mixing well.  Set flour mixture aside.

In a blender container, combine orange pieces and orange juice; cover and blend at medium speed until peel is finely chopped.  Add egg and butter; cover and blend again until well mixed.  Pour orange mixture over flour mixture, stirring until just blended.

Fill greased muffin pans (2 3/4-inches in diameter) or muffin pans lined with paper baking cups two-thirds full.  Bake in a preheated moderate oven (375 degrees F.) for 15 to 20 minutes or until muffins are done and lightly browned. 

 

Note: For more distinctive pieces of orange peel in the muffins, may wish to grate the orange peel before blending the orange in the blender and stir the grated orange peel into the batter after blending the batter.

 

Note: Bake miniature muffins for only 12 to 15 minutes or until done and lightly browned.

 

Variations: Omit the dates and add 2/3 cup chopped dried sweet cherries or sweetened dried  cranberries to the batter.

Omit dates and add 2/3 cup dark or golden seedless raisins to the batter.

Use cherries or cranberries or raisins with the nuts.
