  Having a Halloween party? 

Serve this easy- to- prepare pizza sandwich

 to a group of tricker/treaters.


  • 12 ounces lean ground beef or uncooked ground chicken or turkey or 12 ounces Italian-style sausage, casing removed, or a mixture (see note)
  • ½ to ¾ cup chopped peeled onion (optional)
  • About ¾ to 1 cup commercial or favorite recipe pizza sauce or marinara sauce, or as desired
  • Salt and freshly ground black pepper to taste
  • Italian or pizza seasoning to taste (optional)
  • 1 loaf Italian or French bread, cut in half lengthwise
  • 8 ounces sliced mozzarella cheese, each slice cut in half diagonally
  • Freshly grated Parmesan or Roman cheese as desired


In a medium heavy skillet, sauté ground beef or chicken or turkey or Italian sausage and onion, if desired, over moderate heat until meat or sausage is browned; crumble meat or sausage and drain off any excess fat.  Reduce heat; add pizza sauce or marinara sauce and season with salt, pepper, and Italian or pizza seasoning to taste.  Bring mixture to a simmer and continue to simmer, loosely covered, for about 10 to 15 minutes to develop flavors.  Arrange bread loaf halves, cut-side-up, on an ungreased baking sheet.  Spread meat mixture over the cut side of each bread loaf half, dividing evenly.


Bake in a preheated hot oven (400 degrees F.) for 10 minutes.  Top each evenly with half of the mozzarella cheese and sprinkle evenly with Parmesan or Romano cheese.  Continue to bake for an additional 5 to 7 minutes or until mozzarella cheese is melted and Parmesan or Romano cheese is lightly browned.


To serve, cut each bread loaf half into 4 to 6 pieces.  Allow 2 pieces per serving and serve immediately.


Note: If using chicken or turkey, may lightly coat the skillet with non-caloric vegetable cooking spray.

Variation: Add 6 to 8 ounces coarsely chopped fresh mushrooms to sauce mixture.
