E-Z SAUTEED BLACK-EYED PEA PATTIES WITH STEWED TOMATOES WITH ORANGE

E-Z SAUTEED BLACK-EYED PEA PATTIES WITH STEWED TOMATOES WITH ORANGE

4 to 6 servings

Here in the South, one must eat black-eyed peas and stewed tomatoes to ensure good luck for the New Year. Try these tasty sautéed black-eyed pea patties topped with my favorite stewed tomatoes.

2 cups canned or frozen black-eyed peas, well drained

½ cup chopped peeled onion or green onion

1 tablespoon butter or margarine, melted

1 egg or the equivalent of 1 egg in egg substitute, IE, Egg Beaters, beaten

1 teaspoon minced peeled garlic

About ½ cup plus 2 tablespoons flour, divided

1 teaspoon Worcestershire or to taste

1/8 teaspoon baking powder

3 to 4 drops hot pepper sauce or to taste

Seasoned salt or salt to taste

Freshly
ground black pepper to taste

2 tablespoons or as needed hot bacon drippings or cooking oil

Stewed Tomatoes with Orange

Sprigs fresh parsley or minced parsley and minced green onion for garnish

 

Cook frozen black-eyed peas according to package directions; drain well.  Do not cook canned black- eyed peas.

While peas are cooking, sauté onion or green onion in butter in a heavy skillet over moderate heat until tender but not browned.

In a medium bowl, mash one-half of the cooked peas with a potato masher; set aside.  In a blender container, place remaining cooked peas; cover and coarsely puree.  Add pureed peas to mashed peas.  Add sautéed onion, egg, 2 tablespoons flour, garlic, Worcestershire sauce, baking powder, hot pepper sauce, seasoned salt or salt, and pepper to cooked frozen black-eyed peas or canned black peas, mixing well.

Shape mixture into 4 to 6 thick patties, about 3 to 4 inches in diameter, dividing evenly.  Place patties on a plate, cover lightly with wax paper, and refrigerate for 1 hour. 

Dredge patties lightly in remaining ½ cup flour, coating each.  In a large heavy skillet, sauté patties in hot bacon drippings or oil over moderate to high heat until golden brown, about 2 to 3 minutes per side. May sprinkle with additional salt and pepper, if desired.  Drain well on absorbent paper.  To serve, arrange two patties on each plate.  Spoon a small amount of Stewed Tomatoes with Orange over each serving and garnish each with a sprig of parsley or a sprinkle of minced parsley and minced green onion.

Variation: Serve sautéed black-eyed pea patties with a marinara sauce or tomato salsa.
