This adult beverage is an Acadian specialty.Café Brulot is strong black coffee laced with brandy and spices and served flaming.


  • 6 lumps sugar
  • 1 cup brandy
  • 4 cups very strong brewed coffee
  • 6 whole cloves
  • 1 (2 to 3-inch) stick cinnamon
  • Vanilla bean (1-inch in length) (see note)
  • 3 (½-inch squares fresh orange peel


Soak 1 lump sugar in brandy for 2 to 3 minutes (do not allow lump to dissolve); remove and reserve.  Add 5 lumps sugar to brandy.  Pour coffee into a chafing or medium heavy saucepan; place over direct moderate heat.  Stir in cloves, cinnamon, vanilla bean, and orange peel.  Add brandy.  Place reserved brandy-soaked sugar lump on a metal serving ladle and ignite.  Add flaming sugar cube to Café Brulot and serve at once in demitasse or other very small cups.


Note: If vanilla bean is unavailable, may use ½ teaspoon vanilla extract or to taste; however the flavor will not be the same.
